Sippin had a spectacular extended weekend in Vegas celebrating a special birthday for a very special friend, Mr. Dym along with 5 of our dear friends (Mr. Black, Mr. Frank, Mr. Yellie, Mr Labiner and "The Dish" himself).  Was a wonderful weekend filled with laughs, great food and, of course, a few TOP NOTCH wines.  We enjoyed all three with dinner at the Wynn's Lakeside Restaurant where we indulged in one of the best meals, and New York Strip Steaks, I may have ever had the pleasure of eating in my life.  


 
2000 Far Niente Cabernet Sauvignon:  We enjoyed this TOP TOP Notch wine courtesy of Mr. Black.  I have to say this may have been one of the best wines I have ever had the pleasure of drinking and cannot thank Mr. Black for schlepping it all the way from New York to Sin City and sharing with all of us.  This wine is classically structured with soft to mild tannins.  It is rich in flavor with hints of raspberry and blackberry along with a spicy oak aroma.  One might think that a 2000 may be past it's prime but this bottle showed no signs of that.  In fact, it seemed as if it could have been cellared for a few more years but why wait that long for something so special.  Only once had I had the pleasure of "sippin" a Far Niente Cabernet and I have to say that I must try to make this more of a habit as it was simply that exceptional.  For those of you who prefer, they also produce a Top Notch Chardonnay but save your dollars for the Cabernet as it is well worth it if you want to impress a client, wife, girlfriend or just enjoy it yourself. 
 


2005 Silver Oak Cabernet Sauvignon:   Silver Oak is one of Napa's most consistent producers of high quality wine and this bottle certainly did not disappoint.  While not quite as impressive as the Far Niente, it was still Top Notch and no slouch in it's own right.  Very mild tannins and soft to the palate this complex Cabernet mixed well with the New York Strip Steak I (and 5 of us) enjoyed at dinner (did I already mention how great my steak was !!!!).  Probably could have aged for a few more years but again, why wait when you can enjoy it now.  This was also a gift from Mr. Frank who brought it along with him in honor of Mr. Dym's birthday.  

 
2010 Frank Family Cabernet Sauvignon:   Was a first for me. This we ordered direct from the Wynn Wine listHad we not been exposed to the previous two bottles we would have been in awe of this bottle as it was terrific in it's own right.  Lush with hints of dark fruit and hints of fig and plum. Very powerful and intense this wine is clearly one you should seek out and purchase if you happen to run across it in a store.  Not sure it is easy to find as they are a relatively small producer but worth a visit to their site. Extremely easy on the palate and went well with the remainder of the Strip Steak I thoroughly enjoyed
